Whether you’ve always had a passion for creating cuisine using fresh, seasonal and local ingredients, or would like to try something new, this year at The Planting, we invite you to join us in being inspired in the kitchen with a host of remarkable guest Chefs.
From the humblest of ingredients, Jennifer Hill and Annette Long will teach you how to create the crème de le crème of French desserts. Spend time with delicacies from chocolate glazes to ganache and dulce le leche to spun toffee and praline; as well as creating some wonderful pastes, dressings and sauces. Learn to utilise your cooking time with confidence, stock your pantry, limit pre-packaged food and make cooking enjoyable.
By learning the basics from a simple stock (or broth) to an indulgent Persian Orange Cake, build on that simple recipe and turn the ordinary into the extraordinary. Explore many different types of gnocchi and great sauces to go with them with the one & only Matt Golinsky; he will also guide you through preparing several types of seafood you might be a little unsure about.
Matt will also host a wild culinary journey over four courses, using native and foraged foods. Lillypillies, bunya nuts, finger limes, macadamias, lemon myrtle, sea succulents, native violets, warrigal greens, wild raspberries, native ginger and native honey will all feature on a menu showcasing some easily foragable ingredients in the South East Queensland Region.
Cheesemaker and rampant foodie, Valerie Pearson will show you simple ways to hand-make delicious cheese at home & Elisabeth Fekonia will navigate you through ferments such as sauerkraut, fermented tomato sauce, fermented fruit paste, raisin chutney, cucumber pickles, fermented polenta fingers, nuca doca, as well as kombucha tea.
John Elliot will educate us about the great tastes and varieties of Australian Craft Beer through a tasting journey through locally produced craft beer. All of this is designed for the busy person who could use a little refresher inspiration in the kitchen & we hope to inspire you to try exciting new dishes and create new flavours, but most importantly to enjoy cooking.
